Power soup for cold days

Ingredients for 4 portions

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 2 cm fresh ginger, grated
  • 1 tsp turmeric (ground or freshly grated)
  • 2 cloves
  • 5 juniper berries
  • 2 bay leaves
  • 1.5 liters vegetable stock
  • 2 tbsp light miso paste
  • 2 carrots, cut into strips
  • 1 sweet potato, diced
  • 100 g shiitake mushrooms or button mushrooms, sliced
  • 1 tsp soy sauce (optional)
  • Fresh herbs (e.g. coriander or parsley)

Preparation

1. brown the base: Heat the olive oil in a large saucepan over a medium heat. Sauté the onion, garlic and ginger until translucent.

2. add the spices: Add the spices and roast briefly until the aromas are released.

3. vegetable stock and vegetables: Pour in the vegetable stock and add the carrots, sweet potato and mushrooms to the pan. Bring everything to the boil, then reduce the heat and simmer for approx. 15 minutes until the vegetables are soft.

4. stir in the miso: Stir the miso paste in a small bowl with a ladle of the hot broth until smooth, then return to the pot. Miso should not boil so that the healthy enzymes are retained.

5. season to taste: Season to taste with soy sauce, fresh herbs, salt and pepper. Bon Appetit!
