It is valued there for its balancing and calming properties and is one of the so-called adaptogens. <\/p>\n\n<p>On hot days, I prefer to drink tulsi as an iced tea: refreshing, aromatic and with a subtle herbal note. Once the liquid has been absorbed, remove the lupins from the heat and leave to cool. <\/p>\n\n\n\n<p>2 Now cut the onion and garlic into small cubes and place them in a bowl with the lupin flour and breadcrumbs.<\/p>\n\n\n\n<p>3. puree the lupin flakes with a hand blender and then add them to the bowl.<\/p>\n\n\n\n<p>4 Knead the mixture into a smooth dough, add salt and pepper and knead again. Form 6 flat patties with your hands. <\/p>\n\n\n\n<p>6. mix the sweet potatoes cut into sticks with the oil and rosemary and place them in the oven preheated to 200\u00b0C on the lowest shelf. It&#8217;s peak season in our fields now: the last crops are still being planted, weeds need to be controlled &#8211; you can work up a sweat. \ud83e\udd75<\/p>\n\n<p>To keep our spirits up, we like to keep ourselves happy with an iced lupin coffee! \u2615\ufe0f Without any caffeine, it can be enjoyed several times a day without giving you a heart attack and tastes simply delicious! \ud83d\ude0b<\/p>\n\n<p>Boil the lupin coffee in a French press or simply in a pot until strong like espresso and leave to cool. I always make a liter and put it in a glass bottle in the fridge. Add a good dash of plant milk and a few ice cubes and you have a deliciously refreshing summer drink in no time at all.<\/p>\n\n<h2 class=\"wp-block-heading\">Spring spaetzle with nettle<\/h2>\n\n<p>So, are you ready to get a little wild in the kitchen? Today it&#8217;s all about a very special ingredient: stinging nettles! Yes, you heard right. These seemingly annoying plants can actually be turned into delicious dishes and I would like to share one of my favorite recipes with you here.  <\/p>\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/www.artemis.st\/wp-content\/uploads\/2021\/06\/Spa&#x308;tzle-mit-Brennnessel_Zubereitung_800xp.png\" alt=\"\" class=\"wp-image-11860\"\/><\/figure>\n\n<p>First of all, nettles are an incredibly sustainable ingredient. They grow practically everywhere without having to be cultivated or cared for. This means less transportation, less packaging and less environmental impact overall. Plus, they&#8217;re completely free if you collect them yourself! What could be more sustainable than that?<\/p>\n\n<p>Nettles are also incredibly healthy! They are rich in vitamins, minerals and antioxidants. They are also known to be anti-inflammatory and even regulate blood sugar levels. So, why not add a pinch of it to your meals? Their mild, slightly nutty flavor goes perfectly with a variety of dishes.<\/p>\n\n<p>How do I cook with nettles? Well, there are many possibilities! They can be added to soups, stews, omelettes, pasta dishes and even smoothies.  <\/p>\n\n<p>So, the next time you&#8217;re outside and you pass a group of nettles, don&#8217;t hesitate to pick some and bring them into your kitchen. Simmer for 3 minutes, then strain and rinse with cold water.  <\/p>\n\n\n\n<p>3. fry the thinly sliced mushrooms in the pan for about 3 minutes, stirring.  <\/p>\n\n\n\n<p>4 Then pour in the cream, add the finely chopped herbs and mix in the spaetzle.  <\/p>\n\n\n\n<p>5 Divide the creamy spaetzle between plates and sprinkle with Parmesan. Enjoy your meal!<\/p>\n<\/div>\n<\/div>\n\n<h2 class=\"wp-block-heading\">Lupins Dal<\/h2>\n\n<p>Some days we need a cozy meal that caresses the stomach. A dal recipe is particularly suitable for this, which in India is essentially a dish made from pulses. A dal is one of those recipes that you learn once and then enjoy making again and again. The ingredients are easy to obtain and can conveniently be added to the pot almost simultaneously. This lupin dal is a particularly simple recipe that doesn&#8217;t need a lot of frills or fancy ingredients. This gives the dish an extra portion of <strong>minerals<\/strong> such as calcium, magnesium, potassium, iron and silicon as well as vitamins A and C!<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>Preparation<\/strong><\/p>\n\n\n\n<p>1. fry the coconut chips in a pan until golden brown and leave to cool on a plate.<\/p>\n\n\n\n<p>2. peel and dice the ginger, garlic and onion and saut\u00e9 for 2 minutes, stirring constantly. Mix in the cumin, turmeric and tomato paste.  <\/p>\n\n\n\n<p>3. now mix in the vegetable stock with the coconut milk and bring everything to the boil together.  <\/p>\n\n\n\n<p>4. add the lupin flakes and the lentils afterwards. Leave to simmer over a low heat for around 10 minutes until the liquid is almost completely absorbed and the lentils are soft.<\/p>\n\n\n\n<p>5 Now you can season the dal with salt, pepper and lime juice.<\/p>\n\n\n\n<p>6. divide the dal between your bowls and garnish with the coconut chips and fresh chopped herbs.<\/p>\n<\/div>\n<\/div>\n\n<h2 class=\"wp-block-heading\">Crispy linseed crackers with rosemary<\/h2>\n\n<p><strong>Ingredients<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li>100 g spelt flour<\/li>\n\n\n\n<li>50 g lupin flakes<\/li>\n\n\n\n<li>80 g linseed<\/li>\n\n\n\n<li>60 g sunflower seeds<\/li>\n\n\n\n<li>\u00bd red onion<\/li>\n\n\n\n<li>1 garlic clove<\/li>\n\n\n\n<li>50 ml olive oil<\/li>\n\n\n\n<li>\u00bd tsp salt<\/li>\n\n\n\n<li>200 ml boiling water<\/li>\n\n\n\n<li>2 tsp dried rosemary<\/li>\n\n\n\n<li>  \u00bd tsp coarse sea salt<\/li>\n<\/ul>\n\n<p><strong>Preparation<\/strong><\/p>\n\n<p>1 Peel and finely chop the onion and garlic.  <\/p>\n\n<p>2. mix the spelt flour, lupin flakes, linseed, sunflower seeds, chopped onion and garlic and salt with the olive oil in a bowl.  <\/p>\n\n<p>3. Heat 180 ml water and stir into the mixture to form a creamy batter. Leave to cool slightly.  <\/p>\n\n<p>4 In the meantime, preheat the oven to 150 degrees hot air.  <\/p>\n\n<p>5 Line a baking tray with baking paper. Roughly spread the mixture on top. Place another sheet of baking paper on top and spread the dough thinly by hand or with a rolling pin.  <\/p>\n\n<p>6 Now use a knife to draw fine lines where the crackers will later be broken. This will give you nicely uniform crackers.  <\/p>\n\n<p>7 Finally, sprinkle the whole thing with dried rosemary and coarse salt.  <\/p>\n\n<p>8 Bake in the oven for about 40-50 minutes. At the end of the baking time, remove from the oven, leave to cool slightly and carefully break into pieces along the marked lines.  <\/p>\n\n<p>9. stored airtight in a storage jar or cookie tin, the crackers will stay crispy and keep for several weeks.  <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Zucchini <\/strong> and lupin quiche<\/h2>\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"600\" height=\"403\" src=\"https:\/\/www.artemis.st\/wp-content\/uploads\/2022\/06\/Quiche-mit-Lupinenmehl_600xp-1.png\" alt=\"\" class=\"wp-image-5460\" srcset=\"https:\/\/www.artemis.st\/wp-content\/uploads\/2022\/06\/Quiche-mit-Lupinenmehl_600xp-1.png 600w, https:\/\/www.artemis.st\/wp-content\/uploads\/2022\/06\/Quiche-mit-Lupinenmehl_600xp-1-300x202.png 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/figure>\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>Ingredients<\/strong> <strong>for the base<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>50 g sweet lupin flour<\/li>\n\n\n\n<li>200 g spelt flour<\/li>\n\n\n\n<li>1\/4 tsp cream of tartar baking powder<\/li>\n\n\n\n<li>1\/2 tsp salt<\/li>\n\n\n\n<li>125 g butter<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>Ingredients<\/strong> <strong>for the topping<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>400 g zucchini<\/li>\n\n\n\n<li>100 g mushrooms<\/li>\n\n\n\n<li>1 carrot<\/li>\n\n\n\n<li>1 red onion<\/li>\n\n\n\n<li>250 ml lupin drink (alternatively plant milk)<\/li>\n\n\n\n<li>4 eggs<\/li>\n\n\n\n<li>2 tsp dried thyme<\/li>\n\n\n\n<li>Salt\/ Pepper<\/li>\n\n\n\n<li>freshly grated nutmeg<\/li>\n\n\n\n<li>125 g Parmesan or sheep&#8217;s cheese<\/li>\n<\/ul>\n<\/div>\n<\/div>\n\n<p><strong>Preparation<\/strong><\/p>\n\n<p>Mix the lupin flour, spelt flour, baking powder and salt in a bowl. Cut the butter into small pieces and add 3 &#8211; 4 tablespoons of cold water. Then knead everything quickly with your hands to form a smooth dough. Leave the dough to rest in the fridge for 30 minutes.  <\/p>\n\n<p>Preheat the oven to 200\u00b0C and grease the base of the tin with olive oil. Roll out the dough into a circle on a floured work surface and place in the tin. Form a 3 cm high rim and prick the dough several times with a fork. Then cover with baking paper, spread the pulses on top and bake for 15 minutes. bake blind.  <\/p>\n\n<p>Whisk the lupin drink with the eggs and thyme and season well with salt, pepper and nutmeg.  <\/p>\n\n<p>Grate the zucchinis and carrots, finely chop the mushrooms and spread over the quiche base. Crumble the sheep&#8217;s cheese on top and pour the egg milk over it. Bake the quiche in the oven for 45 mins. Bake until golden brown. Then add the lupin flakes and vinegar and leave to simmer over a low heat.<\/li>\n\n\n\n<li>Leave everything to cool slightly and then pour the mixture into a blender. Now add the tomato pur\u00e9e and the remaining olive oil, mix well and season with salt and pepper to taste. With the lupin flakes, the dish is filling enough that I like to leave out the spaghetti and use zucchinis instead. So also perfect for those who want to cook without gluten.
